I like adding peas, carrots, onions, and spices to mine. Spices include pepper (not a real spice), rosemary, oregano, thyme. Its so easy that even I can't screw it up!

Quick and dirty lasagne (without the lasagne)

      1lb mince
1 large or 2 medium onions
      1/4 lb butter
      2/3 pint milk
      three tablespoons plain flour
1/2 lb strong cheddar cheese (grated)
2 oz mozzarella cheese (grated or thinly sliced)
      large splash of EVOO
      1 tin chopped tomato
      1 tin passata (sieved tomato)
      large pinch mixed herbs
4 large cups of pasta (conchigli for preference)
      1 bottle JD
      1/2 bottle flat coke

Pour a large JD. Add equal measure of flat coke. Drink.

Fry and drain the mince (ground beef if you are a rebellious colonial)

Chop the onion very fine, and fry in the EVOO. When transluscent, add herbs, mince, tomato and passata. Leave to bubble gently.

Put the pasta on to boil for 12/15 mins (less if fresh)

Where did that JD go? Pour another, and drink.

Melt the butter in a heavy, deep pan. Add half the milk. Allow to come to simmer, while mixing the remaining milk with the flour. Use the flour/milk mix to thicken the butter/milk mix. Add the grated cheddar, a bit at a time. You are looking for a consistency between runny and gooey - thick enough for the spoon to stand up, but thin enough to pour.

Get a large, deep oven dish, and layer in the three constituents, mince/tomato mix, then cheese sauce, then pasta. Repeat until you run out of pan, or ingredients. The last layer should be pasta, then the rest of the cheese sauce.

Put it in the oven at 200 deg C for 20 mins.

Still got some JD left? Nows the time to drink it!

Take out the dish, and sprinkle on the mozzarella. Grill until brown.

Finish the JD. You are contributing to the economy by keeping the population of Lynchburg in work.

Serve. Enjoy. More than three people? Double the quantities, but probably not the JD.

      Baldric.
