If you cook it down with potatoes and cut up sausage, you can then eat as is or over rice. I was married to a Cajun for over 26 years so I got used to rice! The Germanfest in Robert's Cove, La has a good one!

Cooking it that much takes away the advantage of eating cabbage.

I'm sure; I eat broccoli and kale raw. Cabbage might take a little effort.

I have on occasion eaten cabbage raw but usually zap it for a couple of minutes in the microwave to soften it a little.

Disappoint them. Sauerkraut isn't offered that much in South Germany. Red Cabbage yes, cooked with apple. I just returned from a three visit to Garmisch and had ayearning for sauerkraut. No gasthaus had it on the menu. I guess I got to go back to Nuremberg for some kraut and their great wurst...but they have lousy beer.

Beer can be worse. No one goes to Robert's Cove for the Beer...The Texas Renaissance Festival may have some decent beer, though. Each year they feature a German Beer Garten.
