    Recipe for Chicken Breast or Pork Chop

    Scratch Mayonnaise Recipe:
    1 egg yolk, 1 T Dijon mustard, 2T white wine vinegar, 3/4 cup EVOO, 5 grinds salt & pepper
    Put egg yolk in bowl and whisk the rest of the ingredients in the bowl to form an emulsion.
    The Mayo can latter be used for base for other salad dressings or as is on a burger/ sandwich, etc...

    Sauce Mix:
    1/4 cup Mayo, 1/4 cup parmesan cheese mixed in bowl.

    Spray pam on a small cookie sheet & lay chicken or 1" thick cut pork chops on sheet.
    Using a tooth pick pin thinner sections of the chicken to form a uniform thickness then spread with the back of a spoon.
    Once the sauce is spread sprinkle the chicken or chops with Italian Bread Crumbs.
    Set oven @ 425f and cook for 10 minutes, remove and check using thermo pen for final temp of 168f chicken or 145f pork.

    Remove from heat once the temperature is reached and let stand on a bread board on the counter to allow the juices to penetrate the meat for at least 10 minutes.
